A wine cooler that runs colder than its setting has lost its sense of when to stop. The control reads a temperature sensor, usually on the back wall or in the air stream, and cycles the compressor or the thermoelectric module to hold the number you chose. A sensor that reads warm, a relay whose contacts have welded shut, or a board stuck calling for cold keeps the cooling going past the set point. On a dual-zone unit a damper stuck open can pour cold into the warmer zone. A cooler in an unheated garage or a cold basement in winter can be too cold for a simpler reason: many units can only remove heat, so when the room falls below the setting the wine falls with it, unless the model has a heater for cold rooms.
