Some do it with two evaporators, others with a single cooling system and a damper or a fan that decides how much cold each zone receives, and a few side-by-side units run two separate systems. Each zone has its own sensor, and the control keeps both zones in step by opening, closing and switching. That makes a dual-zone unit the most likely to show a problem in only one half: the upper zone creeping warm while the lower one is perfect, or the white wine zone freezing a bottle while the red zone lags.
